M7 steel and holm oak

There are two types of cleaver: european and chinese. The european cleaver is used to cut bones as if it were an ax. The chinese cleaver can be very useful and versatile. It is used for different types of cutting, especially when they require precision.
Both the santoku and the chinese cleaver can be substitutes to the chef's knife.
